Summer time means Bar-B-Que Season! Going outside lighting up the grill, enjoying good food, family and friends! Summer time also means raining on and off and some weekends rain just comes out of nowhere it seems. On a side note, I am very thankful for that rain, the more rain the less I have to water the vegetables growing out back!
Here in our home I can eat Bar-B-Que all year round! On the days where I have a taste for some finger licking saucy chicken but don’t have the time to fire up the grill, I fall back on one of my favorite variations of Oven Baked BBQ Chicken.
I love doing this recipe in the oven because the clean-up is extremely reasonable and the prep and cook time is pretty much hands off until it is completely done. With this oven BBQ chicken, it is very versatile with the sides you can cook with it. You can dress this meal all the way up and have an awesome feast, or make it into a simple meal with a veggie and starch on the side.
One of the starches I like to make with this BBQ chicken is a side of cheesy homestyle macaroni. For the veggie I like to lean towards something green so I might make regular green beans. This recipe is so simple yet delicious and that’s what I love about bbq in general you let the meat do the talking! I hope you enjoy this Oven Baked BBQ chicken recipe!
Baked BBQ Chicken
- 3-4 Pounds of Chicken ( I prefer leg and thigh meat)
- 1 tbsp Salt
- 1 tsp Pepper
- 2 heaping tbsp. Of Seasoning Blend (Old Bay)
- 1 Cup of BBQ Sauce (pre-made or homemade)
Season 3-4 Pounds of chicken with salt and seasoning blend. Coat with 1 cup of bbq sauce and let marinate for 1-3 hrs. (If you are whipping this recipe up last minute don’t worry about marinating!)
Preheat oven to 400 F
Bake chicken uncovered for 1 hr
Apply layer of BBQ sauce of choice and continue cooking for 30 min
Remove from oven, juices should run clear
