Wings! Wings! Wings! Sometimes when you get a craving for something you just need to go ahead and make it! Lemon pepper wings are just that. They are the perfect combination of zesty lemon with a touch of pepper coaxing out the flavor of the chicken.
There are a variety of styles to make lemon pepper wings depending on what you have a taste for. One style is the chicken wing is fried in a regular batter then once it is done cooking the chicken is coated with a layer of dry lemon pepper seasoning. Another way the lemon pepper wings are made is by are frying the wings and then tossing them in a saucy lemon pepper marinade.
To cook these wings, you start out with about 4-5 pounds of wings which should be about 15 whole wings. I like to leave the wings whole if the gathering will be small or if it is just family eating them. When you leave them whole it makes it feel a little more filling and it seems more like a meal than if you split them into wings and flats.
When you have them whole don’t forget to fold the wing tip behind the wing bone into a pretzel shape! I was taught to do this so that you don’t have a wing tip flapping around that could get burned and it looks more appetizing when you serve it up in a wing pretzel. If I were to be making these for a party or larger gathering, then it would be better to split them. When you split the wing into pieces it doubles the amount you have to pass around. Don’t be afraid to make these for a crowd believe me they will be coming back for more!
For this recipe the wings are first marinated with a blend of seasonings then they are baked in the oven until they are perfectly crisp on the outside and juicy on the inside. As much as I love some fried chicken, baking chicken wings in the oven is one of my go too styles for lemon pepper wings. The main reason being the flavor profile of the chicken in this form isn’t lost. The second reason is because the chicken does not have a breading on the outside in which frying would be the optimum choice.
In my home, wings are not reserved to just be eaten during football season or at parties (although these would be perfect for the occasion!) So if you are making these wings for an occasion or just for a craving I hope you enjoy them!
Lemon Pepper Wings
- 1 tbsp Salt
- 1 tbsp Pepper
- 1 tbsp Seasoning Blend ( Old bay)
- 1 tbsp Lemon Pepper Seasoning Blend
- 4-5 lb Chicken Wings
- 2 tbsp Vegetable Oi
Preheat oven to 425 F
Season wings with salt, pepper, lemon pepper, seasoning blend, and tbsp of vegetable oil
Bake chicken for 45 min on a raised baking rack over a sheet pan
