Thanks for stopping by, today I am sharing the recipe for Roast Beef Pinwheels that made their way into my kitchen recently. If you are not familiar with what pinwheels are, they are just sandwiches wrapped in a tortilla and cut down to individual circles or “wheels”. They make the perfect finger food at a summer get together and the presentation of them is very beautiful.
Roast beef pinwheels do not have to be limited to a life of appetizer food. They can be made into lunch and for the ever so bold a light dinner. The reason why you would have to be bold in my eyes to serve these as dinner is due to the fact that I have some hungry big appetite eaters in my home. And although these are filling, our family needs something a little more substantial!
To use these roast beef pinwheels as an appetizer plate them all up on a nice plate or tray and serve with other finger vegetables.
The recipe that I am showing today would make enough pinwheels to serve a small gathering. Double or scale the recipe as you see fit.
To make them into a full meal you can serve them with a nice soup. This way you would have a soup and sandwich type of meal. The type of soup I would serve would have to be on the creamier side vs a broth based soup. Something like a tomato or potato soup would par well in my humble opinion. If you don’t like soups or its too hot to eat soups in the summer for you, I would par this with a classic salad.
The salad can be of any combination, however I would be light handed on eating a salad with too many dairy or meat additions since the roast beef pinwheel has enough meat and cheese in it. For an added crunch in the salad, walnuts should do, or any other type of nut. Dried cranberries on the salad would have a nice sweet and bitter flavor that will enhance the flavor of the roast beef. You could also top the salad with fresh tomatoes to round out the dish. Drizzle a nice vinaigrette on top and voila, lunch is complete.
The real thing I like about these sandwiches besides the taste, is the ease of making them and the many different combinations that can be used to make them. Roast beef pinwheels today smoked ham and cheese pinwheels tomorrow. I mean the versatility is there for the taking.

Roast Beef Pinwheels
- 1 lb. Roast Beef
- Spinach or Green leaf lettuce
- 3 Large Burrito sized sandwich wraps
- 1 cup Cheddar Cheese
- 1/3 cup Mayonnaise
Gather all ingredients together. Make cheese spread by mixing a 3:1 ratio cheese to mayonnaise. This mixture should be creamy, with the mayonnaise acting as a paste to hold the cheese together. Season with salt and pepper to taste.
Spread a layer of cheese spread on tortilla, top with a layer of spinach or green leaf lettuce, then roast beef.
Roll tortilla in to a large burrito wrap. Cut burrito into 1 inch bite sized pieces. Serve Cold.
